Ranch Potato Salad Primavera |

Serves: 4 - 6 |

Ingredients:
4 cups diced -- cooked, red potatoes, cooled* |
1 teaspoon salt and pepper to taste |
1 cup cooked broccoli florets |
1 small yellow squash -- sliced |
1 stalk celery -- chopped |
1/2 cup diced red pepper |
2 large green onions -- chopped |
8 ounces wish-bone ranch dressing |

Preparation / Directions:
In large bowl, sprinkle potatoes with salt and pepper. Add remaining ingredients and marinate in refrigerator at least 2 hours. Makes about 8 cups. Substitution: Use 4 cups cooked and cooled pasta.
